Our sushi rice is a blend of three different kinds of Koshihikari rice.
Our sushi vinegar is a blend of two different kinds of red vinegar (Asaku), sugar and salt.
These ingredients are all from Japan.
The fish we mainly use is flown in from Toyosu Fish Market in Japan.
